Ingredients

2 medium zucchinis, grated

1 cup ricotta cheese

1 cup shredded mozzarella cheese

3 eggs

1/2 cup grated Parmesan cheese

1 cup all-purpose flour

1/2 cup fresh basil, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

1 pre-made pie crust (store-bought or homemade)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This step is crucial to prevent a soggy pie.

Mix the Filling: In a large mixing bowl, combine the squeezed zucchini, ricotta cheese, mozzarella cheese, Parmesan cheese, and the three eggs. Stir until well combined.

Season the Mixture: Add the chopped basil, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) to the mixture. Stir to incorporate all the flavors evenly.

Prepare the Pie Crust: If using a frozen pie crust, let it thaw according to package instructions. Place it in a 9-inch pie dish, crimping the edges as desired.

Fill the Crust: Pour the zucchini mixture into the prepared pie crust, spreading it evenly with a spatula.

Drizzle Olive Oil: Drizzle the tablespoon of olive oil on top of the filling for added flavor and moisture.

Bake: Place the pie in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the filling is set.

Cool: Once baked, remove the pie from the oven and let it cool for about 10-15 minutes before slicing. This will help the filling to firm up a bit more.

Serve: Slice into wedges and serve warm or at room temperature. This pie pairs beautifully with a simple green salad or a tangy vinaigrette.
