2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (use panko for extra crunch!)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

Cooking spray or olive oil for drizzling

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

    Prepare the Zucchini: Wash the zucchinis and slice them into ¼-inch thick rounds. Lay the slices out on a clean kitchen towel. Sprinkle lightly with salt and allow them to sit for about 10-15 minutes to draw out moisture. This will help them crisp up in the oven.

      Make the Coating: In a bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper until well combined.

        Prepare the Egg Wash: In another bowl, whisk the eggs until they are fully mixed.

          Coat the Zucchini: Pat the zucchini slices dry with the towel to remove excess moisture. Dip each slice into the egg wash, allowing any excess to drip off, and then into the breadcrumb mixture, pressing down slightly to ensure an even coating.

            Arrange on Baking Sheet: Place the coated zucchini crisps in a single layer on the prepared baking sheet. Ensure they aren’t overlapping for optimal crispness. Lightly spray or drizzle with olive oil for added crunch.
