2 medium zucchinis, grated and excess moisture squeezed out

1 cup canned chickpeas, drained and rinsed

1/2 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

3 green onions, finely chopped

2 garlic cloves, minced

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp paprika

1/4 tsp cayenne pepper (optional, for heat)

1/2 tsp baking powder

1/2 cup all-purpose flour (or chickpea flour for gluten-free)

Salt and pepper, to taste

Oil for frying (such as olive oil or vegetable oil)

Prepare the Zucchini: In a large bowl, grate the zucchinis and sprinkle with a little salt. Let them sit for about 10 minutes to draw out excess moisture. Afterward, place the grated zucchini in a clean kitchen towel and wring out the moisture until they are as dry as possible.

    Blend the Chickpeas: In a food processor, add the drained chickpeas, garlic, cumin, coriander, paprika, cayenne pepper (if using), baking powder, and a pinch of salt and pepper. Pulse until the mixture is well combined but slightly chunky; you want some texture.

      Combine Ingredients: Transfer the chickpea mixture to a mixing bowl and add the grated zucchini, parsley, cilantro, and green onions. Mix well.

        Add Flour: Gradually stir in the all-purpose flour until everything is combined, being careful not to overmix. The mixture should be moist but hold together when formed into a ball. Adjust with more flour or chickpea flour if too wet.

          Form the Bites: With your hands, shape the mixture into small balls or patties, about 1-1.5 inches in diameter.

            Fry: Heat about 1/2 inch of oil in a large frying pan over medium heat. Once hot, carefully add the falafel bites in batches (do not overcrowd the pan). Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

              Serve: Serve warm with a side of tahini sauce, tzatziki, or your favorite dipping sauce. Garnish with extra fresh herbs and lemon wedges if desired.
