Ingredients

2 medium zucchinis (about 2 cups grated)

6 large eggs

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup milk (any kind)

1/4 cup chopped fresh basil (or 1 tablespoon dried basil)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon black pepper

1/2 teaspoon salt

1 cup cherry tomatoes, halved for garnish (optional)

Olive oil or cooking spray for greasing

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with olive oil or cooking spray.

Prepare the Zucchini: Rinse and grate the zucchinis. If they are very watery, place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.

Combine Ingredients: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well blended.

Add Cheeses and Basil: Stir in the grated zucchini, cheddar cheese, Parmesan cheese, and fresh basil into the egg mixture until evenly combined.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly. If desired, scatter the halved cherry tomatoes on top for added color and flavor.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the egg is set and the top is golden brown.

Cool and Serve: Once baked, remove from the oven and let cool for a few minutes. Slice into squares and serve warm or at room temperature. Enjoy your deliciously savory zucchini egg bake!
