Ingredients

2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup marinara sauce (for topping)

1 cup sliced pepperoni or your choice of toppings (mushrooms, bell peppers, etc.)

Additional mozzarella cheese for topping

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare Zucchini: Grate the zucchinis using a box grater, then place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to achieving a crispy crust.

Mix the Crust Ingredients: In a large bowl, combine the drained grated zucchini, shredded mozzarella cheese, grated Parmesan cheese, egg, garlic powder, oregano, salt, and pepper. Mix well until the ingredients are fully incorporated.

Form the Crust: Transfer the zucchini mixture to the prepared baking sheet and spread it out into a rectangular shape, about 1/4 inch thick. Make sure to press down firmly to ensure it holds together.

Bake the Crust: Bake the crust in the preheated oven for 15-20 minutes, or until it is golden brown and firm to the touch. Remove from the oven and let it cool for a few minutes.

Add Toppings: Once the crust has cooled slightly, spread a layer of marinara sauce evenly over the top of the crust. Add your desired toppings (sliced pepperoni, vegetables, etc.) and finish with a generous sprinkle of additional mozzarella cheese.

Bake Again: Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Slice and Serve: Remove from the oven and allow to cool for a few minutes. Cut the pizza into slider-sized squares or rectangles. Garnish with fresh basil leaves if desired.

Enjoy: Serve warm and enjoy your delicious zucchini crust pizza sliders!
