1 cup corn kernels (fresh, frozen, or canned)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup grated Parmesan cheese

2 large eggs, beaten

2 tablespoons green onions, finely chopped

1 clove garlic, minced

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

Oil for frying (canola or olive oil)

Prepare the Zucchini: Begin by grating the zucchinis. Place the grated zucchini in a clean kitchen towel or cheesecloth, twist the cloth, and squeeze out as much excess moisture as possible. This step is crucial to ensuring your fritters are not soggy.

    Mix Ingredients: In a large mixing bowl, combine the drained zucchini, corn kernels, all-purpose flour, cornmeal, Parmesan cheese, green onions, garlic, baking powder, salt, black pepper, and paprika. Stir the mixture until all ingredients are well incorporated.

      Add Eggs: Pour the beaten eggs into the mixture and stir again until just combined. Be careful not to overmix; a few lumps are okay.
