Ingredients

1 cup grated zucchini (about 1 medium zucchini)

1 cup rolled oats

1/2 cup natural almond or peanut butter

1/2 cup chocolate protein powder

1/4 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/4 teaspoon sea salt

1/2 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts or seeds (optional for added crunch)

Instructions

Prepare Zucchini: Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or cheesecloth. This step is crucial to prevent the mixture from becoming too wet.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chocolate protein powder, cocoa powder, and sea salt. Mix well to ensure an even distribution.

Add Wet Ingredients: In another bowl, mix the grated zucchini, almond or peanut butter, honey (or maple syrup), and vanilla extract. Stir until well combined.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients. Stir until fully combined. The mixture should be thick but moldable. If using, fold in the mini chocolate chips and chopped nuts.

Shape Balls: Using your hands, scoop out small amounts of the dough and roll them into balls about 1 inch in diameter. If the mixture is too sticky, dampen your hands slightly with water while rolling.

Chill: Arrange the protein balls on a parchment-lined baking sheet and place them in the refrigerator for at least 30 minutes to firm up and set.

Serve: Enjoy these deliciously nutritious zucchini chocolate protein balls as a snack or post-workout treat! Store leftovers in an airtight container in the fridge for up to one week.
