Zesty Salsa Chicken Burrito Bowls

1 lb boneless, skinless chicken breasts

1 cup salsa (your favorite variety)

1 cup uncooked brown rice

2 cups chicken broth (or water)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 tsp cumin

1 tsp chili powder

1 avocado, diced

1 cup cherry tomatoes, halved

1 cup shredded lettuce

1/2 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Prepare the Chicken: Season the chicken breasts with salt, pepper, cumin, and chili powder on both sides. In a large skillet over medium heat, add a splash of olive oil. Once hot, add the seasoned chicken breasts and sear for about 5-7 minutes on each side, or until fully cooked (internal temperature reaches 165°F).

    Add Salsa: Pour in the salsa over the chicken, lower the heat to a simmer, and let it cook for an additional 5 minutes, allowing the flavors to meld together. Remove from heat and let the chicken sit for a few minutes before shredding it with two forks.
