1 lb (450g) boneless, skinless chicken thighs

3 tbsp olive oil

Juice of 1 lemon

2 cloves garlic, minced

1 tsp dried oregano

1 tsp smoked paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and drained

2 cloves garlic, minced

1 tbsp olive oil

1 tsp white wine vinegar

Salt and pepper to taste

Fresh dill, chopped (optional)

For the Bowl Assembly:

2 cups cooked quinoa or brown rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and sliced

1 avocado, sliced

Fresh parsley or extra dill for garnish

Marinate the Chicken:

    In a large bowl, mix together olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper. Add the chicken thighs and ensure they are well coated with the marinade. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours for deeper flavor.

      Prepare the Tzatziki Sauce:

        In a mixing bowl, combine Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, olive oil, white wine vinegar, salt, and pepper. If desired, add chopped fresh dill.
