1 lb (450g) ground chicken

1/4 cup finely chopped red onion

1 clove garlic, minced

2 tbsp chipotle adobo sauce (from canned chipotles in adobo)

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded sharp cheddar cheese

12 slider buns

1/4 cup mayonnaise

1 tbsp lime juice

1/4 cup fresh cilantro, chopped (for garnish)

Optional toppings: sliced jalapeños, avocado slices, lettuce

Instructions
 

Prepare the Chicken Mixture: In a large bowl, combine ground chicken, red onion, garlic, chipotle adobo sauce, smoked paprika, cumin, salt, and black pepper. Mix until the ingredients are well incorporated but be careful not to overwork the chicken.

    Form Sliders: Divide the mixture into 12 equal portions and shape each portion into a slider patty. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.

      Cook the Sliders: Preheat a large skillet or griddle over medium heat and lightly grease it with cooking spray or olive oil. Cook the patties for about 5-6 minutes on each side, or until they reach an internal temperature of 165°F (74°C). In the last minute of cooking, top each slider with a generous sprinkle of shredded cheddar cheese and cover to melt.

        Prepare the Sauce: While the sliders are cooking, mix mayonnaise and lime juice in a small bowl until well combined.

          Assemble the Sliders: On each slider bun, spread a thin layer of the lime mayo, place a chicken and cheddar patty on top, and add your choice of toppings such as jalapeños, avocado, and lettuce. Top it with the other half of the bun.

            Serve: Arrange the sliders on a large platter, garnish with fresh cilantro, and serve with pickles or a side of your favorite dipping sauce.
