1 pound ground turkey

8 oz elbow macaroni or any pasta of your choice

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 cups chicken broth

1 medium onion, diced

3 cloves garlic, minced

2 cups shredded cheddar cheese (divided)

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Olive oil for sautéing

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet over medium heat, drizzle a bit of olive oil. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and sauté for another minute until fragrant.

        Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until it is browned and cooked through, about 5-7 minutes. Drain any excess grease if necessary.

          Combine Ingredients: Stir in the cooked pasta, kidney beans, black beans, diced tomatoes with their juices, chicken broth, chili powder, cumin, paprika, salt, and pepper. Mix everything well to combine.

            Add Cheese: Gently fold in 1½ cups of shredded cheddar cheese until well incorporated.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly.

                Top with Cheese: Sprinkle the remaining ½ cup of shredded cheddar cheese on top.

                  Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

                    Garnish and Serve: Once baked, remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro if desired before serving.
