Tuna Lettuce Wraps with Blueberry Glaze

Ingredients
  

2 cans (5 oz each) tuna in water, drained

1/4 cup plain Greek yogurt

2 tbsp mayonnaise

1 tbsp Dijon mustard

1/4 cup diced celery

1/4 cup diced red bell pepper

1/4 cup chopped green onions

Salt and pepper to taste

8 large lettuce leaves (Romaine or Butter lettuce work well)

For Blueberry Glaze:

1 cup fresh or frozen blueberries

1/4 cup water

2 tbsp honey or maple syrup

1 tbsp balsamic vinegar

1 tsp cornstarch mixed with 1 tbsp water (for thickening)

Instructions
 

Prepare the Blueberry Glaze:

    - In a small saucepan, combine the blueberries, water, honey (or maple syrup), and balsamic vinegar.

      - Bring to a simmer over medium heat, stirring gently until the blueberries start to burst.

        - Mix in the cornstarch slurry (cornstarch and water mixture) to thicken the glaze. Allow it to simmer for an additional 2-3 minutes until the glaze reaches your desired thickness.

          - Remove from heat and set aside to cool.

            Make the Tuna Filling:

              - In a mixing bowl, combine the drained tuna, Greek yogurt, mayonnaise, and Dijon mustard. Mix well until creamy and smooth.

                - Fold in the diced celery, red bell pepper, and green onions. Season with salt and pepper to taste.

                  Assemble the Wraps:

                    - Take a lettuce leaf and spoon a generous amount of the tuna mixture onto the center of the leaf.

                      - Drizzle some of the blueberry glaze over the tuna filling.

                        - Carefully wrap the lettuce leaf around the filling, securing it as best as you can, and repeat with the remaining leaves and filling.

                          Serve:

                            - Arrange the tuna lettuce wraps on a serving platter. Drizzle with extra blueberry glaze if desired and enjoy immediately.
