Tofu Lettuce Wraps with Cherry Glaze

Ingredients
  

1 block (14 oz) firm tofu, pressed and cubed

1 tablespoon cornstarch

2 tablespoons sesame oil, divided

1 cup fresh cherries, pitted and halved

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup (for vegan option)

1-inch piece of ginger, grated

2 cloves garlic, minced

1 red bell pepper, diced

1 carrot, shredded

1 small cucumber, thinly sliced

1 bundle of romaine or butter lettuce leaves

Sesame seeds, for garnish

Fresh cilantro or mint, for garnish

Instructions
 

Prepare the Tofu:

    - Once the tofu is pressed, cut it into bite-sized cubes.

      - Toss the tofu cubes in cornstarch until well-coated.

        Cook the Tofu:

          - Heat 1 tablespoon of sesame oil in a non-stick skillet over medium-high heat.

            - Add the tofu and cook until golden and crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.

              Make the Cherry Glaze:

                - In the same skillet, add the remaining tablespoon of sesame oil.

                  - Add the grated ginger and minced garlic, sautéing for about 30 seconds until fragrant.

                    - Add the halved cherries, soy sauce, rice vinegar, and honey (or maple syrup).

                      - Let the mixture cook down for about 5 minutes until the cherries soften and the glaze thickens. Stir in the cooked tofu, ensuring it's well coated and heated through.

                        Prepare the Wrap Ingredients:

                          - While the glaze is cooking, prepare the fresh vegetables: dice the bell pepper, shred the carrot, and slice the cucumber.

                            Assemble the Wraps:

                              - Choose your preferred lettuce leaves to serve as the base for the wraps.

                                - Lay out a lettuce leaf, add a spoonful of the tofu and cherry glaze mixture, and top with diced bell pepper, shredded carrot, and cucumber slices.

                                  Garnish and Serve:

                                    - Sprinkle sesame seeds on top for added crunch and finish with fresh cilantro or mint for a burst of freshness.

                                      - Serve immediately with extra cherry glaze on the side for dipping.
