4 large flour tortillas

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheese (cheddar and Monterey Jack blend works great)

1 medium red bell pepper, diced

1 small red onion, diced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Sour cream or Greek yogurt (for serving)

Salsa (for serving)

Instructions
 

Prepare the Filling: In a large bowl, combine the black beans, corn, diced red bell pepper, diced red onion, cumin, chili powder, garlic powder, salt, and black pepper. Mix well until everything is evenly coated with the spices.

    Layer the Quesadillas: Place a tortilla on a clean, flat surface or a large cutting board. Spread a generous amount of the bean and corn mixture on half of the tortilla. Sprinkle with a layer of shredded cheese. Fold the tortilla in half to cover the filling neatly. Repeat this step for the remaining tortillas and filling.

      Cook the Quesadillas: Heat a non-stick skillet or griddle over medium heat. Once hot, add one folded quesadilla to the skillet. Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Remove the quesadilla and place it on a cutting board. Repeat with the remaining quesadillas.
