Taco-Stuffed Sweet Potatoes with Avocado

4 medium sweet potatoes

1 tablespoon olive oil

1 pound ground turkey (or beef for a richer flavor)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (can use frozen)

1 packet taco seasoning (or homemade blend with cumin, paprika, garlic powder, and chili powder)

1 medium onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (fresh or canned)

Salt and pepper to taste

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake Sweet Potatoes: Wash and dry the sweet potatoes. Prick them all over with a fork and place them on a baking sheet. Bake for 45-60 minutes, or until tender when pierced with a knife.

      Cook the Filling: While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add diced onions and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.

        Add Meat and Seasoning: Increase the heat to medium-high and add the ground turkey (or beef) to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Season with salt, pepper, and taco seasoning. Stir in black beans, corn, and tomatoes and cook for another 5-10 minutes until everything is heated through.

          Assemble Stuffed Potatoes: Once the sweet potatoes are baked, carefully slice them in half lengthwise and gently fluff the insides with a fork to create space for the filling. Spoon the taco mixture into each sweet potato half.

            Cheese it Up: Top each stuffed sweet potato with shredded cheese and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

              Finish & Serve: Remove from the oven, top with diced avocado, and garnish with fresh cilantro. Serve with lime wedges on the side for a zesty kick.
