Taco-Stuffed Sweet Potatoes for Family Dinner

4 medium sweet potatoes

1 lb ground turkey or beef

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 packet taco seasoning (about 1 oz)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar or Monterey Jack)

1 avocado, diced

1 cup Greek yogurt or sour cream

1 cup fresh cilantro, chopped

1 lime, cut into wedges

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Sweet Potatoes: Wash and prick the sweet potatoes with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender and easily pierced with a fork.

      Cook the Filling: In a large skillet over medium heat, brown the ground turkey or beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.

        Add Ingredients: Stir in the black beans, corn, taco seasoning, and diced tomatoes. Mix well and let it simmer for about 5-7 minutes, allowing flavors to meld. Season with salt and pepper to taste.

          Prepare Sweet Potatoes: Once the sweet potatoes are done, carefully remove them from the oven. Let them cool slightly, then slice them in half lengthwise to create a boat shape.

            Stuff the Potatoes: Using a fork, fluff the insides of the sweet potatoes slightly. Spoon the taco meat mixture generously into each half, evenly distributing the filling.

              Add Cheese: Top each stuffed sweet potato with shredded cheese, then return them to the oven for another 5-10 minutes, or until cheese is melted and bubbly.
