Sweet & Spicy Mango Chicken Tacos

1 lb boneless, skinless chicken thighs

2 ripe mangoes, diced

2 tablespoons olive oil

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

For the Taco Assembly:

8 small corn or flour tortillas

1 cup red cabbage, thinly sliced

1 avocado, sliced

½ cup fresh cilantro, roughly chopped

Lime wedges for serving

Optional: Hot sauce for added spice

For the Mango Salsa:

1 mango, diced

1 small red onion, finely chopped

1 jalapeño, minced (adjust for heat preference)

Juice of 1 lime

Salt and pepper to taste

Instructions
 

Marinate the Chicken:

    - In a bowl, mix together the olive oil, honey, soy sauce, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.

      - Add the chicken thighs to the marinade and mix until fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

        Prepare the Mango Salsa:

          - In a separate bowl, combine diced mango, red onion, jalapeño, lime juice, salt, and pepper. Toss well and let sit for at least 15 minutes to allow the flavors to meld.

            Cook the Chicken:

              - Preheat your grill or stovetop skillet over medium-high heat.

                - Remove the chicken from the marinade and grill for about 5-7 minutes per side, until fully cooked and internal temperature reaches 165°F (75°C). If using a skillet, add a little olive oil to the pan before cooking.

                  - Once cooked, remove from heat and let the chicken rest for 5 minutes before slicing into bite-sized pieces.
