Breakfast is often referred to as the most important meal of the day, and there's a certain magic in crafting a morning feast that not only satisfies hunger but also nurtures the soul. One of my go-to breakfast dishes is Sweet Potato Turkey Breakfast Hash—a vibrant and hearty medley of sweet potatoes, ground turkey, and a blend of spices that invigorates the senses and provides a nourishing start to the day.

Sweet Potato Turkey Breakfast Hash

2 medium sweet potatoes, diced

1 lb ground turkey

1 small onion, finely chopped

1 bell pepper (red or yellow), diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/4 teaspoon cayenne pepper (optional)

Salt and pepper to taste

2 tablespoons olive oil

4 large eggs

Fresh parsley, chopped (for garnish)

Avocado slices (optional, for serving)

Instructions
 

Prep the Sweet Potatoes: Start by peeling and dicing the sweet potatoes into 1/2-inch cubes. Rinse and set them aside.

    Cook the Ground Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey, breaking it up with a spatula. Season with salt, pepper, smoked paprika, cumin, and cayenne pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the turkey from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the onion and bell pepper for about 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

        Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet with the onions and bell pepper. Stir to combine, then cover the skillet and cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized.

          Combine Ingredients: Once the sweet potatoes are cooked, return the ground turkey to the skillet. Stir everything together, heating thoroughly. Taste and adjust seasoning with more salt and pepper if needed.

            Fry the Eggs: In a separate non-stick skillet, fry the eggs sunny-side up or to your preferred doneness.

              Assembly: Serve the sweet potato turkey hash on plates, topped with the fried eggs. Garnish with freshly chopped parsley and add avocado slices on the side if desired.
