2 large eggs

Cook the Sweet Potatoes: In a medium pot, bring water to a boil. Add the cubed sweet potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Mash and Combine: In a large mixing bowl, mash the cooked sweet potatoes with a fork or potato masher until smooth. Add in the corn kernels, flour, cornmeal, eggs, green onions, garlic powder, paprika, salt, and pepper. Mix until fully incorporated, forming a thick batter.

      Shape the Fritters: Using your hands, form the mixture into small patties, about 2 to 3 inches in diameter. Place them on a plate or baking sheet.
