2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 can (15 oz) black beans, drained and rinsed

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

8 corn or flour tortillas

1 avocado, sliced

1 cup red cabbage, thinly sliced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: Crumbled feta cheese or dairy-free cheese

Preheat the oven: Start by preheating your oven to 425°F (220°C).

    Roast the sweet potatoes: On a baking sheet, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, chili powder, salt, and pepper until evenly coated. Spread them out in a single layer and roast for 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through.

      Prepare black beans: While the sweet potatoes are roasting, take a medium saucepan over medium heat and add the rinsed black beans. Season with a pinch of salt, pepper, and a sprinkle of cumin if desired. Heat through for about 5-7 minutes, stirring occasionally.

        Warm the tortillas: In a separate skillet over medium heat, warm the tortillas for about 30 seconds on each side or until pliable. Alternatively, you can wrap them in foil and place them in the oven to warm them during the last few minutes of the sweet potato roasting.

          Assemble the tacos: Once the sweet potatoes are roasted, it's time to assemble the tacos. Start with a tortilla, add a generous scoop of roasted sweet potatoes, followed by black beans, sliced avocado, and a handful of red cabbage.
