Ingredients

4 medium sweet potatoes, peeled and cut into cubes

1/2 cup pecans, chopped

1/4 cup unsalted butter, melted

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon vanilla extract

Salt, to taste

Freshly ground black pepper, to taste

Optional: Fresh parsley or thyme for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: In a large mixing bowl, combine the cubed sweet potatoes with melted butter, maple syrup, cinnamon, nutmeg, salt, and pepper. Toss until the sweet potatoes are well coated.

Spread on Baking Sheet: Spread the sweet potato mixture evenly onto the prepared baking sheet. Ensure they are in a single layer for even roasting.

Roast the Sweet Potatoes: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and lightly caramelized. Stir halfway through cooking to ensure even roasting.

Toast the Pecans: While the sweet potatoes are roasting, in a small skillet over medium heat, toast the chopped pecans for about 5 minutes or until fragrant. Stir frequently to avoid burning.

Combine and Serve: Once the sweet potatoes are done, remove them from the oven and stir in the toasted pecans and vanilla extract. Adjust salt and pepper to taste.

Garnish: If desired, garnish with fresh parsley or thyme before serving for a pop of color.

Enjoy: Serve warm as a side dish for your favorite protein or enjoy as a cozy vegetarian option!
