Sweet Maple Oat Bars

They're easy to customize with your favorite nuts and dried fruits, and only take about 15 minutes to prepare before baking. 2 cups rolled oats

1 cup almond flour

1/2 cup maple syrup

1/2 cup peanut butter (or almond butter)

1/4 cup unsweetened applesauce

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts, pecans, or almonds)

1/2 cup dried fruits (cranberries, raisins, or chopped dates)

Optional: chocolate chips for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Mix the Wet Ingredients: In a large mixing bowl, combine the almond butter, maple syrup, applesauce, and vanilla extract. Stir well until the mixture is smooth and fully combined.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, almond flour, cinnamon, and salt. Ensure the dry ingredients are thoroughly blended.

        Combine Mixtures: Pour the dry ingredients into the wet ingredient mixture. Stir until just combined, making sure the oats are well coated. Fold in the chopped nuts and dried fruits until evenly distributed.

          Spread in the Baking Dish: Pour the mixture into the prepared baking dish. Using a spatula or your hands, evenly press the mixture into the bottom of the dish, ensuring it's compact and level.

            Optional - Add Toppings: If desired, sprinkle a handful of chocolate chips on top and press them gently into the surface of the mixture.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Slice: Remove the bars from the oven and allow them to cool in the baking dish for about 10-15 minutes. Carefully lift the bars out using the parchment overhang and let them cool completely on a wire rack. Once cool, cut into squares or rectangles.

                  Store: Store the sweet maple oat bars in an airtight container at room temperature or in the fridge for up to a week.
