Ingredients
  

1 pound smoked sausage, sliced into rounds (such as kielbasa or andouille)

2 cups Brussels sprouts, halved

1 cup baby carrots, halved lengthwise

1 red bell pepper, diced

1 yellow bell pepper, diced

1 red onion, cut into wedges

3 cloves garlic, minced

3 tablespoons olive oil

⅓ cup honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sheet Pan: Line a large baking sheet with aluminum foil or parchment paper for easy cleanup.

      Combine the Veggies: In a large mixing bowl, add the halved Brussels sprouts, baby carrots, diced red and yellow bell peppers, red onion wedges, and minced garlic.

        Dress the Veggies: Drizzle 2 tablespoons of olive oil over the vegetables. Season with salt and pepper to taste. Toss until evenly coated, then spread the veggies in an even layer on the prepared sheet pan.

          Add the Sausage: Scatter the sliced smoked sausage evenly over the veggies.

            Make the Glaze: In a small bowl, whisk together the honey, soy sauce, Dijon mustard, smoked paprika, and the remaining 1 tablespoon of olive oil until well combined.
