Sweet Corn and Feta Pasta Salad

2 cups uncooked pasta (cavatappi or fusilli work great)

1 cup fresh sweet corn kernels (or frozen, thawed)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

For the dressing:

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop cooking. Set aside.

    Prepare the Vegetables: While the pasta is cooking, prepare the sweet corn, cherry tomatoes, cucumber, and red onion. If using fresh corn, you can either boil it briefly or sauté it with a little olive oil for about 5 minutes to enhance its sweetness and flavor.
