1 medium red bell pepper, finely chopped

1 small green chili, finely chopped (adjust to taste)

2 green onions, finely sliced

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp cumin powder

1/2 tsp smoked paprika

1/2 tsp salt (adjust to taste)

1/4 tsp black pepper

1/4 cup milk (or plant-based milk for a vegan option)

2 large eggs (or flaxseed eggs for a vegan option)

2 tbsp fresh cilantro, chopped (optional)

Vegetable oil, for frying

Sweet chili sauce, for serving

Prepare the Batter: In a large mixing bowl, whisk together the flour, baking powder, cumin powder, smoked paprika, salt, and black pepper.

    Add Wet Ingredients: In a separate bowl, beat together the eggs and milk. If you're using flaxseed eggs, combine 2 tbsp of ground flaxseed with 6 tbsp of water and let it sit for 5 minutes to thicken. Stir the wet mixture into the dry ingredients until just combined.

      Incorporate Vegetables: Fold in the sweet corn, chopped red bell pepper, green chili, green onions, and cilantro (if using) into the batter until evenly distributed.

        Heat the Oil: In a deep skillet or frying pan, heat about 1-2 inches of vegetable oil over medium heat until hot (around 350°F/175°C).

          Shape the Fritters: Using a spoon or a small ice cream scoop, drop spoonfuls of the batter into the hot oil. Don't overcrowd the pan; fry in batches for best results.
