Ingredients

1 cup almond butter (smooth)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

1/2 cup puffed rice cereal

1/2 cup coconut flakes (unsweetened)

1/2 cup dark chocolate chips (dairy-free, if desired)

1/4 teaspoon sea salt

Optional: 1/2 cup chopped nuts (e.g., almonds or walnuts) for extra crunch

Instructions

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides for easy lifting later. Set aside.

Mix the Wet Ingredients: In a medium mixing bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

Combine Dry Ingredients: In a large bowl, mix together the rolled oats, puffed rice cereal, coconut flakes, sea salt, and chopped nuts (if using).

Combine Wet and Dry Ingredients: Pour the almond butter mixture into the bowl with the dry ingredients. Use a spatula to fold everything together until all the oats and other ingredients are evenly coated.

Add Chocolate Chips: Gently fold in the dark chocolate chips, ensuring they are distributed throughout the mix.

Press Mixture into Pan: Transfer the mixture into the prepared baking dish. Using a spatula or your hands, press it firmly and evenly into the pan.

Chill: Place the baking dish in the refrigerator for at least 2 hours, or until the mixture is firm.

Slice the Squares: Once chilled, lift the mixture out of the pan using the parchment paper overhang. Cut into 16 squares using a sharp knife.

Store: Keep the sweet almond butter squares in an airtight container in the refrigerator for up to 1 week, or freeze for longer storage.
