1 sheet of puff pastry (thawed if frozen)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 small onion, finely chopped

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon black pepper

1 egg (for egg wash)

Salt to taste

Sesame seeds (optional, for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes). Add the chopped spinach and cook until wilted (about 2-3 minutes). Remove from heat and let cool slightly.

      Prepare Filling: In a mixing bowl, combine the sautéed spinach and onion mixture with feta cheese, ricotta cheese, Parmesan cheese, dried oregano, black pepper, and a pinch of salt. Mix until well combined.

        Roll Out Puff Pastry: Lightly flour your work surface and roll out the puff pastry sheet to smoothen it. Cut into rectangles (approximately 4x6 inches).

          Fill the Pastry: Place a generous tablespoon of the spinach and feta filling in the center of each rectangle, leaving about 1 inch of space around the edges.

            Seal the Rolls: Fold the pastry over the filling, creating a roll. Press the edges together to seal, and use a fork to crimp the edges for an extra tight seal.
