Ingredients

12 chicken drumsticks

1/2 cup honey

1/4 cup soy sauce (low sodium)

4 cloves garlic, minced

2 teaspoons sriracha sauce (adjust for heat preference)

1 teaspoon smoked paprika

1 teaspoon ground ginger

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon olive oil

1 tablespoon rice vinegar

Sesame seeds and green onions, for garnish

Instructions

Marinate the Chicken: In a large bowl, combine honey, soy sauce, minced garlic, sriracha, smoked paprika, ground ginger, black pepper, salt, olive oil, and rice vinegar. Whisk until well combined. Add the chicken drumsticks, ensuring they are well coated in the marinade. Cover and refrigerate for at least 1 hour (or up to overnight for best flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top. This will help the chicken cook evenly and get crispy skin.

Arrange Drumsticks: Remove the marinated chicken drumsticks from the fridge and shake off any excess marinade. Arrange them in a single layer on the wire rack.

Bake: Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown. To get extra crispy skin, broil the drumsticks for an additional 2-3 minutes, watching closely to prevent burning.

Glaze: While the chicken is baking, pour the remaining marinade into a small saucepan. Bring to a boil over medium heat, then reduce the heat and let it simmer for 5-7 minutes until it thickens slightly. Brush this glaze over the chicken during the last 5 minutes of baking for extra flavor.

Serve: Once cooked, remove the drumsticks from the oven and let them rest for a few minutes. Garnish with sesame seeds and sliced green onions before serving.
