1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup water (adjust for batter consistency)

1 cup buffalo sauce (your choice of heat level)

2 tablespoons unsalted butter, melted

Fresh celery sticks and ranch or blue cheese dressing, for serving

Instructions
 

Preheat Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Batter: In a mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Gradually add water while stirring until you get a smooth, thick batter that can coat the cauliflower without dripping too much.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, making sure it is well-coated. Shake off any excess batter and place them on the prepared baking sheet in a single layer.

        Bake the Cauliflower: Bake in the preheated oven for 20-25 minutes, or until the batter is golden and crispy, flipping them halfway through for even cooking.

          Prepare the Buffalo Sauce: While the cauliflower is baking, mix the buffalo sauce with the melted butter in a separate bowl until smooth.

            Coat with Buffalo Sauce: Once the cauliflower is done baking, remove it from the oven and carefully toss the hot florets in the buffalo sauce until well-coated. You can do this in small batches for better coverage.
