1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 can (14 oz) diced tomatoes (with juices)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh or frozen)

2 tbsp chili powder

1 tbsp cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1/2 tsp salt

1/4 tsp black pepper

2 cups chicken broth (low sodium recommended)

1 tbsp olive oil

Optional toppings: sour cream, shredded cheese, chopped green onions, fresh cilantro, avocado

Instructions
 

Brown the Turkey: In a skillet over medium heat, add the olive oil. Once hot, add the ground turkey and cook until browned (about 5-7 minutes). Break up the meat as it cooks. Drain any excess fat and set aside.
