1 lb boneless, skinless chicken breasts

1 can (15 oz) white beans (cannellini or navy beans), rinsed and drained

1 can (4 oz) diced green chiles

1 medium onion, diced

2 cloves garlic, minced

1 cup corn (frozen or canned)

1 cup low-sodium chicken broth

1 tsp ground cumin

1 tsp chili powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup heavy cream or coconut milk (for a dairy-free option)

1/4 cup fresh cilantro, chopped (for garnish)

Juice of 1 lime

Optional toppings: diced avocado, shredded cheese, sour cream, or tortilla strips

Instructions
 

Prep the Chicken: Place the boneless, skinless chicken breasts in the bottom of the slow cooker.

    Add Ingredients: Add the rinsed white beans, diced green chiles, diced onion, minced garlic, corn, chicken broth, ground cumin, chili powder, paprika, salt, and black pepper to the slow cooker. Stir gently to combine.
