30 oz frozen hashbrowns (about 2 bags)

2 cups shredded cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of chicken soup (or cream of mushroom for a vegetarian option)

1/2 cup chopped onion (fresh or sautéed)

1/2 cup melted butter

1/4 tsp garlic powder

1/4 tsp black pepper

1 cup crushed cornflakes (optional, for topping)

1/4 cup additional shredded cheddar (for topping)

Instructions
 

Prepare the Slow Cooker: Lightly grease the interior of your slow cooker with cooking spray or butter to prevent sticking.

    Mix the Base: In a large mixing bowl, combine the frozen hashbrowns, 2 cups of shredded cheddar cheese, sour cream, cream of chicken soup, chopped onion, melted butter, garlic powder, and black pepper. Stir until all ingredients are mixed thoroughly.

      Layer in the Slow Cooker: Pour the cheesy hashbrown mixture into the prepared slow cooker, spreading it evenly.

        Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the hashbrowns are tender and the dish is heated through. If you prefer a slightly crispy topping, remove the lid for the last 30 minutes of cooking.

          Add the Topping: If using, sprinkle the crushed cornflakes on top, along with the additional 1/4 cup of shredded cheddar. You can drizzle a bit of melted butter over the cornflakes for extra crunch and flavor.
