Ingredients

1 can (15 oz) of chili (beef or vegetarian, your choice)

1 can (10 oz) diced tomatoes with green chilies

1 package (8 oz) cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 tbsp taco seasoning

1 bell pepper (red or green), finely chopped

½ onion, finely chopped

1 clove garlic, minced

Salt and pepper, to taste

Optional toppings: sliced jalapeños, green onions, sour cream

Instructions

Prep the Ingredients: Start by chopping the bell pepper and onion, and mincing the garlic. This will save time and ensure everything is ready to go into the slow cooker.

Combine Ingredients: In the slow cooker, add the softened cream cheese, beef or vegetarian chili, diced tomatoes with green chilies, taco seasoning, bell pepper, onion, and minced garlic. Mix everything together until well incorporated.

Add the Cheeses: Sprinkle the shredded sharp cheddar and mozzarella cheese on top of the mixture without stirring.

Cooking Time: Cover the slow cooker and set it on low for 2-3 hours or on high for 1-1.5 hours, until the cheeses are melted and the dip is bubbling. Stir occasionally to ensure an even melty blend.

Final Touches: Once the dip is fully melted and heated through, taste and season with salt and pepper if needed.

Serve: Transfer the dip to a serving bowl. Top with optional ingredients like sliced jalapeños, chopped green onions, or a dollop of sour cream. Serve warm with tortilla chips, veggie sticks, or crusty bread!
