2 cups shredded sharp cheddar cheese

1 cup milk (whole or 2%)

1 cup cauliflower florets (steamed and mashed)

1 cup butternut squash (peeled, cubed, and cooked)

1/2 cup cream cheese (softened)

1 tablespoon olive oil

1/2 cup breadcrumbs (for topping)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley (for garnish, optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions. Drain and set aside.

    Prepare the Veggies: While the pasta is cooking, steam the cauliflower florets until tender, then mash them with a fork or potato masher. Cook the butternut squash until soft (you can steam or microwave it), then mash or blend until smooth.

      Make the Cheese Sauce: In a large skillet over medium heat, add the olive oil. Once heated, add in the garlic powder and onion powder, sautéing for about 30 seconds until fragrant.
