Simple Turkey and Spinach Meatball Subs

For the Meatballs:

1 lb ground turkey

1 cup fresh spinach, finely chopped

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon Italian seasoning

Salt and pepper, to taste

For the Marinara Sauce:

1 can (15 oz) crushed tomatoes

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon olive oil

Salt and pepper, to taste

For Assembly:

4 sub rolls

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Meatballs: In a large mixing bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, Italian seasoning, salt, and pepper. Mix until just combined. Shape the mixture into 12 equal-sized meatballs.

      Bake Meatballs: Place the meatballs on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until they are cooked through and golden brown, flipping halfway through.

        Make Marinara Sauce: While the meatballs are baking, heat olive oil in a saucepan over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute. Then add the crushed tomatoes, dried basil, salt, and pepper. Simmer for about 10 minutes, stirring occasionally.

          Combine Meatballs and Sauce: Once the meatballs are done, remove them from the oven and add them to the marinara sauce. Let them simmer together on low heat for an additional 5 minutes.

            Assemble Subs: Cut the sub rolls lengthwise, but don’t cut all the way through. Place the meatballs with marinara sauce into each roll. Top generously with shredded mozzarella cheese.

              Melt Cheese: Place the assembled subs on a baking sheet and pop them back into the oven. Bake for an additional 5-7 minutes or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven, garnish with fresh basil leaves if desired, and serve immediately.
