Simple Charcuterie Board Quesadillas

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup sliced pepperoni

1 cup thinly sliced salami

1/2 cup black olives, sliced

1/2 cup roasted red peppers, chopped

1/4 cup fresh basil leaves, chopped

1/4 cup honey or fig jam (for drizzling)

Olive oil or butter (for cooking)

Fresh herbs (optional for garnish, e.g., thyme or rosemary)

Instructions
 

Prep the Filling: In a large bowl, combine the mozzarella, cheddar, pepperoni, salami, black olives, roasted red peppers, and basil. Mix well to combine all ingredients evenly.

    Assemble the Quesadillas: Lay a flour tortilla flat on a clean surface. Spread 1/4 of the cheese and charcuterie mixture over one half of the tortilla. Fold the tortilla in half to enclose the filling and press down gently to help it stick. Repeat with the remaining tortillas and filling.

      Cook the Quesadillas: Heat a large skillet over medium heat. Add a little olive oil or butter. Once the skillet is hot, place the folded quesadilla into the skillet. Cook for about 3-4 minutes on each side, or until golden brown and the cheese has melted. Repeat this step for all quesadillas, adding more oil or butter as needed.

        Slice and Serve: Once cooked, remove the quesadilla from the skillet and place on a cutting board. Let it cool for a minute, then slice it into wedges. Drizzle with honey or fig jam for added sweetness and garnish with fresh herbs if desired.
