1 lb (450g) beef sirloin, thinly sliced

2 cups egg noodles

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

2 cups beef broth

1 cup sour cream

2 tbsp Worcestershire sauce

2 tbsp all-purpose flour

2 tbsp olive oil

1 tsp paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Egg Noodles: In a large pot, bring water to a boil. Add a pinch of salt and the egg noodles. Cook according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef sirloin, seasoning with salt and pepper. Sear until browned (about 3-5 minutes). Remove the beef from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are tender (about 5 minutes).

        Prepare the Sauce: Sprinkle the flour over the onion and mushroom mixture, stirring well to coat for about 1 minute. Gradually add the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer.

          Add Beef and Season: Return the seared beef to the skillet. Stir in Worcestershire sauce and paprika, letting it cook for another 5 minutes until heated through and the sauce thickens slightly.

            Finish with Sour Cream: Lower the heat and mix the sour cream into the beef mixture until well combined. Be careful not to boil once the sour cream is added. Taste and adjust for seasoning, adding more salt and pepper as needed.

              Serve: Serve the beef stroganoff over the prepared egg noodles. Garnish with chopped fresh parsley for that extra touch.
