Ingredients

For the Shrimp Skewers:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

1 tablespoon fresh lime juice

Wooden or metal skewers (if using wooden skewers, soak in water for at least 30 minutes)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

1/4 cup red onion, finely chopped

1 small jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Instructions

Marinate the Shrimp: In a large bowl, combine the olive oil, smoked paprika, garlic powder, cumin, lime juice, salt, and pepper to create a marinade. Add the shrimp and toss to coat evenly. Cover and refrigerate for 20-30 minutes to let the flavors infuse.

Prepare the Salsa: While the shrimp is marinating, prepare the strawberry salsa. In a medium bowl, combine the diced strawberries, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Mix well and let it sit for 10-15 minutes for the flavors to meld.

Skewer the Shrimp: Preheat your grill or grill pan over medium-high heat. Thread the marinated shrimp onto the skewers, about 5-6 shrimp per skewer, ensuring they are evenly spaced.

Grill the Skewers: Lightly oil the grill grates. Place the shrimp skewers on the grill, cooking for about 2-3 minutes per side until the shrimp are opaque and cooked through. Be careful not to overcook!

Serve: Remove the shrimp skewers from the heat and let them rest for a minute. Serve the warm skewers on a platter topped with the fresh strawberry salsa. Garnish with extra cilantro if desired.

Enjoy: Pair these lively shrimp skewers with your favorite sides or enjoy them on their own for a light and refreshing meal!
