Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, chilled and cubed

1 cup sharp cheddar cheese, shredded

1/4 cup fresh herbs (such as chives, parsley, or thyme), finely chopped

3/4 cup buttermilk

1 large egg (for egg wash, optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and black pepper. Whisk together until well blended.

Add Butter: Add the chilled, cubed butter to the dry mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Incorporate Cheese and Herbs: Stir in the shredded cheddar cheese and chopped fresh herbs until evenly distributed throughout the mixture.

Mix in Buttermilk: Create a well in the center of the mixture and pour in the buttermilk. Stir gently with a fork until the dough just comes together; be careful not to overmix.

Shape the Biscuits: Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle about 1-inch thick. Fold the dough over onto itself 2-3 times for added flakiness. Then, using a biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet.

Egg Wash (Optional): If you want a golden crust, beat the egg in a small bowl and brush it over the tops of the biscuits.

Bake: Bake in the preheated oven for 15-20 minutes or until the biscuits are golden brown on top and cooked through.

Cool and Serve: Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack. Serve warm with butter or your favorite spread.
