For the beef filling:

1 lb ground beef

1 medium onion, finely chopped

2 carrots, diced

2 cloves garlic, minced

1 cup frozen peas

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup beef broth

2 tablespoons olive oil

For the mashed potato topping:

4 large russet potatoes, peeled and cubed

4 tablespoons unsalted butter

½ cup milk (or cream for a richer taste)

Salt and pepper to taste

½ cup shredded cheddar cheese (optional)

Instructions
 

Prepare the potatoes: In a large pot, bring salted water to a boil. Add the peeled and cubed potatoes and cook for about 15-20 minutes, or until tender. Drain well.

    Make the mashed potatoes: In a large mixing bowl, mash the drained potatoes. Add butter, milk (or cream), and season with salt and pepper. Mix until creamy and smooth. Set aside.

      Cook the beef filling: In a large skillet over medium heat, warm the olive oil. Add the chopped onions and carrots, cooking until softened (about 5 minutes). Stir in the minced garlic and cook for an additional minute.

        Brown the beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned. Drain excess fat, if necessary.

          Add flavors: Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour in the beef broth and bring the mixture to a simmer. Allow to cook for about 5 minutes until the sauce thickens slightly.

            Mix in the peas: Stir in the frozen peas, mixing well to combine. Taste and adjust seasoning if necessary.

              Assemble the pie: Preheat your oven to 400°F (200°C). In a greased baking dish, spread the meat filling evenly across the bottom. Spoon the mashed potatoes over the filling, spreading evenly. If desired, sprinkle shredded cheddar cheese on top.

                Bake: Place the assembled shepherd’s pie in the oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.

                  Serve: Remove from the oven and let it rest for about 5 minutes before serving. Slice and serve warm.
