1 pound Italian sausage (sweet or spicy, casing removed)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cooked rice (white or brown)

1 cup diced tomatoes (canned or fresh)

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (adjust based on spice preference)

1 cup shredded mozzarella cheese (plus extra for topping)

1 tablespoon olive oil

Salt and pepper to taste

Instructions
 

Preheat your oven to 375°F (190°C).

    Prep the Peppers:

      - Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

        Cook the Sausage:
