4 large ripe tomatoes, sliced

1 tablespoon olive oil

Salt and black pepper, to taste

1 teaspoon dried oregano

1 teaspoon garlic powder

4 whole wheat pita breads

8 ounces fresh mozzarella cheese, sliced

1 cup fresh basil leaves, roughly chopped

Balsamic glaze, for drizzling (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Tomatoes: On a baking sheet, arrange the sliced tomatoes in a single layer. Drizzle with olive oil, and season with salt, black pepper, dried oregano, and garlic powder. Toss gently to coat the tomatoes evenly.

      Roast the Tomatoes: Place the baking sheet in the preheated oven and roast the tomatoes for about 20-25 minutes, or until they are soft, caramelized, and slightly charred at the edges.

        Assemble the Pita Melts: While the tomatoes are roasting, cut each pita bread in half to create pockets. Open each pocket and layer the roasted tomatoes inside. Add slices of fresh mozzarella cheese on top of the tomatoes.

          Melt the Cheese: Place the stuffed pitas on a baking sheet. Return them to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
