Roasted Cauliflower Tacos with Lime Crema

1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup red cabbage, thinly sliced

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

For the Lime Crema:

1/2 cup sour cream or Greek yogurt

Zest and juice of 1 lime

1 clove garlic, minced

Salt to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large bowl, combine the cauliflower florets with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and pepper. Toss until well-coated.

      Roast the Cauliflower: Spread the seasoned cauliflower evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is golden brown and tender, flipping halfway through for even cooking.

        Make the Lime Crema: While the cauliflower is roasting, in a small bowl, mix together the sour cream (or Greek yogurt), lime zest, lime juice, minced garlic, and a pinch of salt. Taste and adjust seasoning as needed. Set aside.

          Warm the Tortillas: Once the cauliflower is almost done, warm the tortillas in a skillet over medium heat for about 30 seconds on each side, or until they are pliable. You can also wrap them in foil and place them in the oven for the last 5 minutes of roasting.

            Assemble the Tacos: To assemble, place a generous amount of roasted cauliflower in each tortilla. Top with sliced red cabbage, avocado slices, and a drizzle of lime crema.

              Garnish and Serve: Finish with fresh cilantro and serve with lime wedges on the side.
