Ingredients

4 large whole wheat tortillas

1 cup cream cheese, softened (or vegan cream cheese)

1/2 cup finely shredded carrots

1/2 cup red bell pepper, finely chopped

1/2 cup cucumber, finely diced

1/2 cup yellow bell pepper, finely chopped

1/2 cup purple cabbage, thinly sliced

1/4 cup fresh spinach leaves

1/4 cup fresh herbs (such as parsley or cilantro), chopped

Salt and pepper to taste

Optional: 1/4 cup hummus for extra flavor

Instructions

Prepare Your Veggies: First, wash all the vegetables thoroughly. Peel the carrots if preferred, and then finely shred the carrots using a grater. Dice the cucumbers, chop the bell peppers, and slice the purple cabbage thinly.

Make the Cream Cheese Spread: In a mixing bowl, combine the softened cream cheese with a pinch of salt and pepper. If you want to add a twist, stir in the hummus for extra flavor and creaminess. Mix well until combined.

Assemble the Pinwheels: Lay out one tortilla on a clean surface. Spread a generous layer of the cream cheese mixture evenly across the entire surface of the tortilla, leaving a small border around the edges.

Layer the Veggies: Start by adding a layer of spinach leaves at the bottom of the tortilla. Next, layer the shredded carrots, red and yellow bell peppers, cucumbers, and purple cabbage, arranging them evenly in colorful strips.

Roll It Up: Carefully start at the bottom edge of the tortilla and roll it tightly towards the top, making sure to keep the filling intact. Press gently as you roll. Repeat this process for the remaining tortillas.

Slice and Serve: Using a sharp knife, slice each rolled tortilla into 1-inch thick pinwheels. Arrange the pinwheels on a platter, and serve immediately or cover with plastic wrap and refrigerate until ready to serve.

Garnish (Optional): For an extra touch, you can sprinkle some fresh herbs on top of the pinwheels or serve them with a side of your favorite dipping sauce.
