Quick Lemon Garlic Shrimp Pasta

8 ounces spaghetti or linguine

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust based on spice preference)

Zest of 1 lemon

Juice of 1 lemon

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for about 2 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic. Stir in the red pepper flakes, lemon zest, and lemon juice.

        Combine Ingredients: Pour in the heavy cream and stir until combined. Add the cooked pasta to the skillet, along with the grated Parmesan cheese and reserved pasta water. Toss everything together over low heat to combine well.

          Add Shrimp: Return the cooked shrimp to the skillet and toss everything again until the shrimp is heated through. Adjust the seasoning with more salt and pepper if necessary.

            Serve: Plate the pasta and garnish with fresh parsley. Serve with lemon wedges on the side for an extra zing!
