1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional for heat)

1 lemon, juiced and zested

Salt and black pepper, to taste

1 cup cooked quinoa or rice (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Quinoa/Rice: In a medium pot, cook the quinoa or rice according to package instructions. Set aside once done.

    Sauté the Asparagus: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the asparagus pieces and sauté for about 4-5 minutes until they are tender-crisp, stirring occasionally. Season with a pinch of salt and pepper. Once cooked, transfer the asparagus to a plate and set aside.

      Cook the Shrimp: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant. Then, add the shrimp to the skillet. Season with salt and black pepper. Cook the shrimp for about 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes.
