Ingredients

1 lb (450g) sirloin steak, thinly sliced

8 oz (225g) egg noodles

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

2 tbsp all-purpose flour

1 cup beef broth

1 cup sour cream

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

2 tbsp olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Egg Noodles: In a large pot of salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

Sear the Beef: In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Season the sliced sirloin with salt and pepper. Add the beef to the skillet in a single layer, cooking for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the remaining 1 tbsp of olive oil. Add the chopped onion and cook for about 2 minutes until translucent. Stir in the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are golden brown and softened.

Create the Sauce: Sprinkle the flour over the mushroom mixture, stirring to coat evenly. Gradually add the beef broth while stirring constantly to avoid lumps. Bring the mixture to a simmer, and let it thicken slightly, about 2-3 minutes.

Add Beef and Cream: Lower the heat and stir in the Worcestershire sauce, Dijon mustard, and sour cream. Add the seared beef back to the skillet, mixing everything together until the beef is coated and heated through. Simmer for another 2-3 minutes. Taste and adjust seasoning with salt and pepper.

Combine with Noodles: Add the cooked egg noodles to the skillet, gently tossing everything together until the noodles are fully coated with the stroganoff sauce.

Serve: Plate the beef stroganoff and garnish with fresh chopped parsley. Serve hot and enjoy your delicious meal!
