Quick and Easy Turkey Meatball Subs

1 pound ground turkey

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

4 submarine sandwich rolls

1 cup shredded mozzarella cheese

Optional toppings: sliced jalapeños, fresh basil, or sliced olives

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped parsley, chopped onion, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until just combined to avoid overworking the meat.

      Form Meatballs: With your hands, form the mixture into 12-14 meatballs, approximately 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
