Pumpkin White Chocolate Cookies

1 cup pumpkin puree (canned or fresh)

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1 cup white chocolate chips

1/2 cup chopped pecans or walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth.

      Add the pumpkin puree, egg, and vanilla extract to the mixture, continuing to beat until well combined.

        In another bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

            Gently fold in the white chocolate chips and chopped nuts (if using), ensuring they are evenly distributed throughout the dough.

              Using a tablespoon or a cookie scoop, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

                Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set but still soft to the touch.

                  Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
