1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) kidney beans, rinsed and drained

1 can (15 oz) pumpkin puree (not pumpkin pie filling)

1 can (14 oz) diced tomatoes with green chilies

1 cup chicken or vegetable broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 tablespoon olive oil

1 cup corn (fresh, frozen, or canned)

Fresh cilantro, for garnish

Sour cream or Greek yogurt (for serving, optional)

Instructions
 

Heat the Olive Oil: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent.

    Add Garlic and Turkey: Stir in the minced garlic and ground turkey, breaking up the meat with a spoon. Cook for about 7-10 minutes, until the turkey is browned and cooked through.

      Spice It Up: Add the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir well to coat the turkey and onion with the spices, cooking for another 2-3 minutes until fragrant.
